I had carrot cake
And I wanted to make a
Healthier version
Awesome and Healthy Apple and/or Carrot Cake
(makes 1 loaf, adapted from here)
Ingredients:
- 1.5 c loosely packed grated carrots or 2 apples grated (skin on!), or a combo
- 1 T flax or chia seed, whole or ground
- 1/2 c maple syrup
- 3/4 c milk (I used soy unsweetened)
- 1/3 c olive oil (or canola oil if you're a chicken)
- 1/2 t cider vinegar
- 2 t lemon zest (dried is fine)
- 1.5 c whole wheat flour
- 2 t cinnamon
- 2 t baking powder
- 1/2 t baking soda
- 1/2 t salt
- 1/2 c raisins
- 1/4 c nuts, chopped (optional)
- 1/2 c powdered sugar + 1-3 T lemon juice (jarred is fine), for the glaze
Instructions:
- Oil a loaf tin. In a bowl, stir together the first 7 ingredients. Stir in the next 5 ingredients and fold in the raisins and nuts. Pour into the loaf tin and bake at 350 F for 45 minutes or until a knife comes out clean. Cool completely.
- Stir together the powdered sugar and 1 T lemon juice. Add more juice until the glaze is pourable. Drizzle over the cake. This cake freezes well.
