This is so easy
You don't even have to peel
Onions or garlic
Cheesy and Garlic-y One Pot Baked Beans
(serves 4, adapted from here)
Ingredients:
- 3 cans small white beans, rinsed and drained
- 1 large onion, halved (if there's tons of dry skin on it, remove those layers)
- 1 parmesan rind and 1/2 c grated parm
- 1 head garlic, halved crosswise (no need to peel)
- 2 bay leaves
- salt and pepper to taste
- 1 shallot, halved (no need to peel unless there's lots of skin)
- 4 sprigs thyme
- 1 c white wine
- 1-2 c panko
- 2 T olive oil
Instructions:
- In a cast iron or other oven safe pan, heat all of the ingredients except the wine, the panko, and the grated parm. Cook, stirring, on medium heat for 5-10 minutes, until the onions start to soften and caramelize a little.
- Add the wine and cook, stirring, another 5 minutes, until the wine is mostly cooked off and the beans start to get creamy.
- Remove from heat and top with the grated parm, followed by the panko, followed by some more olive oil.
- Bake at 400F for 20-30 minutes, or until the onion is soft and the top begins to brown. You'll have to warn people not to eat the bay leaves, the parm rind, and whatever else they find objectionable, but that's part of the experience.
