Amazing and Easy Farro and Broccoli Salad
(serves 4, adapted from smitten kitchen)
Ingredients:
- 1 c semi-pearled farro, boiled/simmered in salted water until tender (about 30 minutes), drained if water is left in the pot (you can also use barley, pasta, whatever you want)
- salt, pepper, and red pepper flakes
- 2-3 c broccoli, diced (frozen is fine), some stems and leaves are fine, steamed in the microwave until just tender
- 3 T olive oil
- 2 t minced garlic (jarred is fine)
- zest and juice of 1 lemon (I would spring for an actual lemon here)
- 1/2 c pecorino romano, grated
Instructions:
- Heat oil, garlic, and spices for about a minute until the garlic starts to brown. Add the broccoli and lemon zest and cook, stirring, for 3-4 more minutes, until it smells amazing. Remove from heat.
- Stir in the farro, lemon juice, and cheese. Season to taste.
- Serve warm, room temperature, or cold. I topped mine with a burrata and it was amazing.
