There is cause for a cookie
That isn't chocolate
Lemon Chia Cookies
(makes 20, adapted from hummusapien)
Ingredients:
- 1 c flour (I used white whole wheat)
- 1/3 c sugar
- 1/4 c chia seeds
- 1 t baking powder
- 1 t baking soda
- 1 t salt
- 1 ripe banana, mashed (I defrosted a frozen one in the microwave)
- 1 c yogurt (I used plain, whole milk -- vegan is fine)
- 1/4 c lemon juice (jarred is fine)
- For the glaze: about 1 c powdered sugar and about 1/4 c lemon juice (jarred is fine)
Instructions:
- Combine all cookie ingredients in a bowl. Don't overmix. Let stand 5 minutes.
- Cover 2 baking stones with parchment and scoop 9 or 10 cookies onto each one.
- Bake at 350 F for 20-25 minutes.
- While they cool a little, combine glaze ingredients until smooth (add more of either to adjust consistency) and the drizzle/spoon/spread over the cookies.
