Smoky Roasted Sweet Corn Soup
(serves 4)
Ingredients:
- 3 cans sweet corn, drained, or use frozen corn (you can buy roasted corn, but, since I roasted the other stuff, I'm not sure it's worth it)
- 2 large shallots, sliced
- 2 T garlic (I used jarred minced garlic, but whole cloves are fine)
- 1 T olive oil
- salt and pepper
- 2-3 chili peppers of your choice, depending on how hot you like it
- 2-3 T smoked paprika
- 1 can coconut milk
- 1-2 c veggie broth (I used Better Than Bouillon No Chicken)
- For garnishes: manchego or cheese of your choice, yogurt, more coconut milk, etc.
Instructions:
- Cover a cookie sheet with foil and spread some olive oil on it. Spread the corn, shallots, garlic, and peppers on it. Drizzle with oil and sprinkle generously with salt and pepper. Roast at 450 F until things start to get nice and brown/dark brown/black at the edges (you don't want everything completely charred), stirring if necessary in order to brown more sides of things. Finish under the broiler if you want.
- Put the roasted veggies in a pot and add the broth, coconut milk, and smoked paprika. Heat through and blend with an immersion blender. Season to taste and serve with garnishes.
