I don't know if black
Rice really tastes better, but
It sure seems that way
Black Rice Pudding
(serves 4, adapted from here)
Ingredients:
- 1 c uncooked black rice (or whatever kind you want), cooked well
- 3/4 c coconut milk or coconut cream (for either kind -- use the stuff from a can)
- 1/2 c water
- 3-4 T maple syrup
- 1 T coconut oil
- 2 t vanilla
- 1 t cinnamon
- 1 t nutmeg
- generous pinch salt
- pomegranate seeds, for topping
Instructions:
- In a pot, heat everything except the rice and pomegranate seeds, stirring, until combined. Add the rice and simmer, stirring, for about 10 minutes or until desired consistency. Season to taste.
- Top with pomegranate seeds and serve.
- This is great, or even best, on day 2, brought to room temperature or warmed in the microwave.
