I loved Spaghetti-O-s, and
Then I remembered
One Pot Grown-Up Spaghetti-O-s
(serves 4, adapted from minimalist baker)
Ingredients (feel free to use whatever pasta shapes, veggies, herbs, and toppings you have):
- 1 red onion, sliced
- 2 carrots, sliced
- 2 small heads broccoli, cut up
- 1 T garlic (I used dried)
- 2 T olive oil
- salt, pepper, red pepper flakes
- 16 oz dry pasta
- 24 oz marinara sauce, crushed tomatoes, or diced tomatoes with their juice
- 2 c water, or as needed
- 1 c parsley, cut up
- more red pepper flakes, and parm (optional), for toppings
Instructions:
- In a big pot, saute the veggies, oil, and spices for 5-10 minutes, or until things are starting to get brown and delicious. Remove veggies from pot.
- Add pasta, water, and sauce to pot and simmer, stirring occasionally, adding water if needed, until pasta is al dente.
- Return veggies to pot and add parsley, stirring just until wilted. Remove from heat and season to taste. Top with toppings.
