Peach Bourbon Cocktails

Dear Turkey,

If you're a lightweight
Like me, just put a little
Splash of the bourbon


Peach Bourbon Cocktails
(serves 8, adapted from smitten kitchen)

Ingredients:

For the peaches:
- 1 very large peach, sliced very thin
- 1/2 c sugar
- 1/2 c water
- 2 T cider vinegar
- generous pinch salt

For each drink:
- a few of the prepared peach slices
- 3-4 mint leaves
- ice
- 2 T of the syrup from the peaches
- 3 T bourbon (or vodka if you don't like bourbon)
- generous splash seltzer (we used Trader Joe's ginger and cranberry)

Instructions:
- To prepare the peaches, combine all ingredients, stir gently, and let stand at room temperature for at least an hour, or covered in the fridge for up to a few days.
- For each drink, muddle the peach slices and the mint in the bottom of the glass. Add the peach syrup and bourbon and stir, then add ice cubes and finish with the seltzer.
