Quick and Delicious One-Bowl Chocolate Loaf Cake
(makes 1 loaf, adapted from smitten kitchen)
Ingredients:
- 1 stick butter, soft or room temperature
- 1 c brown sugar
- 1/2 c white sugar
- 1 egg
- 1 c buttermilk
- 1 t vanilla
- 1.5 c flour (I used white whole wheat)
- 3/4 c cocoa
- 1/4 t baking soda
- 1/2 t baking powder
- pinch salt
Instructions:
- Generously butter and flour a loaf pan (it's okay to use some of the stick of butter you're using for the recipe).
- With an electric mixer, cream the butter and sugars, beat in the egg, buttermilk, and vanilla. Mix in remaining ingredients on low speed just until combined and no major lumps remain. Add another splash of buttermilk if you want to smooth things out a bit, or if you used a whole-grain flour like I did.
- Pour batter into the loaf pan and bake at 325 F for 55-70 minutes, or until a knife comes out clean. Let cool for a few minutes before running a knife around it and removing from the pan.
- Serve with fruit, whipped cream, ice cream, or nothing. This cake is best on day 2 after being stored in a container or foil at room temperature.
