Vintage Applesauce Cake

Dear Turkey,

My mom told me that
This tastes just like the cake from
When she was a kid

Vintage Applesauce Cake
(adapted from budget bytes)

Ingredients:
- scant 3/4 c sugar
- 2 T canola oil
- 1 c unsweetened applesauce
- 1 c white flour
- 1 c whole wheat flour
- 1 t baking soda
- 1/2 t salt
- 1/2 t cinnamon
- 1/2 t nutmeg
- 2/3 c raisins (I used golden), tossed in 1 T flour

Instructions:
- With a spoon, beat/cream the first 3 ingredients until smooth; try to whip a bit of air into them if you can.
- Stir in remaining ingredients and mix until just combined.
- Oil a 10x6" pan or something equivalent (a loaf pan will do), pour the batter in, and bake at 350F for 25-35 minutes (this will depend on pan size), or until the loaf springs back when you press it in the middle with your finger.
- Cool completely and top with cream cheese frosting. (I stirred together 8 oz cream cheese [but you could use vegan cream cheese], 4 T honey, 1 t vanilla, and 1 t cinnamon.)

Enjoy,
Tofu
