Lemon Poppyseed Cake

Dear Turkey,

Normally I think
That all cake should be chocolate,
But this one is good


Lemon Poppyseed Cake
(adapted from here)

Ingredients:

For the cake: 
- 2 c whole wheat flour
- scant 2/3 c sugar
- 1 t baking powder
- 1/2 t salt
- 1 t baking soda
- 4 T poppy seeds
- 2 T lemon or orange peel (dried is fine)
- 1 1/4 c milk (I used soy unsweetened)
- 1/2 c oil (I recommend extra-virgin olive, but you can use canola)
- 1/3 c lemon juice (bottled is fine)
- 1 t vanilla

For the icing:
- 1 c powdered sugar
- 2 T lemon juice (bottled is fine)
- 1 T lemon or orange zest (dried is fine)

Directions:
- Stir together the first 7 cake ingredients. Add the remaining cake ingredients and mix just until combined. Oil a loaf pan. Pour the batter into the pan and bake at 375 F for 40-45 mins, or until a knife comes out clean. Cool completely and remove from pan.
- Stir together icing ingredients and drizzle/pour/spoon over cake.
