"Unhealthy" Cookies
(makes 24, this is a hybrid between what we call unhealthy cookies and what we call healthy cookies)
Ingredients:
- 1 stick butter, vegan butter, or 1/2 c coconut oil, very soft but not melted if possible (if it's melted, no worries - the cookies will just spread out more)
- 1/2 c canola oil
- 1/2 c sugar
- scant 2/3 c brown sugar
- 2 T flax or chia seeds, whole or ground, soaked for a few minutes in 2/3 c warm water (if your fat is room temperature or warmer, you can just throw the seeds and the water right in the bowl)
- 1 t vanilla
- 1 t baking soda
- 1 t salt
- 2.5 c white whole wheat flour (this is one time where I would use white whole wheat or whole wheat pastry instead of straight-up whole wheat flour)
- 1 c chocolate chips
Instructions:
- Combine the first 6 ingredients in a bowl and beat well (you can do this by hand -- don't go crazy). Stir in remaining ingredients.
- Cover two cookie sheets with parchment and drop 12 cookies onto each sheet. Try to keep them a bit rounded as they will flatten in the oven.
- Bake at 350 F for 15 minutes. Cool completely. These freeze well.
