Gnocchi with Sauerkraut and Peas
(serves 1)
Ingredients:
- 1 c uncooked gnocchi (I used whole wheat)
- 1 c frozen peas
- 1/2 c sauerkraut, cabbage, kimchi, whatever you've got (but I highly recommend Jacob's brand kraut)
- 1 t minced garlic (jarred is fine)
- 1 T lemon juice (jarred is fine)
- 1/2 T caraway seeds
- dash salt and pepper
- 1 T butter (or oil, but I would really go butter here)
- 1/4 c grated parm
- 2 T fresh basil, cut up
Instructions:
- Cook the gnocchi and throw the peas in right at the end to thaw them.
- Drain the pasta and peas. While draining, in the same pot, heat the butter, garlic, lemon, caraway, salt and pepper [this would also be an awesome time to add some leeks or shallots]. Once the butter is melted, add the kraut and cook, stirring, for just a few minutes until it just starts to brown.
- Return the pasta and peas to the pot, stir well, and serve. Garnish with the basil, parm, and red pepper flakes if you want.
