Sweet and Savory Grilled Galettes

Dear Turkey,

When it's too hot to
Turn on your oven, that's why
God gave you grilling


Sweet and Savory Galettes
(serves 4)

Ingredients:
- 2 pie crusts (I used my magic recipe of 2 1/4 c flour, 1/2 c ice water, and 1/2 c solid or melted coconut oil -- just double this recipe, throw everything into a bowl and mix with your hands -- it isn't the most elegant crust, and it doesn't roll as as thin as other crusts, but it's easy and doesn't require chilling)
- For the savory: I used 2 small summer squashes and one red potato, sliced thin, one clove garlic, sliced thin, some fresh herbs, salt and pepper, and plenty of parm -- but you can use whatever you want
- For the sweet: I used 2 nectarines, sliced thin, and a healthy drizzle of honey and balsamic reduction (alcohol would also be good here) -- frozen fruits or veggies would work for this recipe, but you might want to thaw them in the microwave and pour off/squeeze out any excess liquid 

Instructions:
- Generously oil 2 cast-iron pans or other grill-safe pans (or some aluminum foil might just work, too). Spread a crust out in each and put the sweet fillings in one and the savory fillings in the other. Crimp/fold/don't do anything with the crust to create a pie/galette/pizza shape. One awesome thing about galettes is that it doesn't really matter how they look. 
-There are lots of questions you could ask yourself here, like: should I par-cook the veggies? (you can but I didn't bother), how big should these be? (up to you!), how much cheese should I use? (a lot!). Don't worry and have fun. 
- Preheat your grill to between 350 and 450 F (no thermometer, no worries). I grilled both of them at the same time and the sweet one didn't end up tasting like garlic. You're looking for the fillings to be soft and for the crust to be baked -- the bottom of the crust might get a little brown or even black, don't worry. If it starts getting really black on the bottom, turn off your grill and let them finish in the ambient heat for a bit. It took me about 45 minutes.
- These instructions are for a gas grill, but you can cook these in a regular oven, on charcoal or over an open fire. 
- Remove from heat, slice, and enjoy.
