Really Easy No-Bake Peanut Butter and Oatmeal Bars
(makes 12, adapted from here)
Ingredients:
- 1 c peanut butter (I used Trader Joe's natural creamy)
- 1 c maple syrup (or, if you're cheap like me, feel free to substitute some light corn syrup: I used about 1/4 c corn syrup, but nobody is stopping you from using all corn syrup, it will change the flavor, but it will still be delicious, and I think the corn syrup may help the bars hold together)
- 3.5 c oatmeal (any kind will work)
- 1/4 c mini chocolate chips (optional)
Instructions:
- Microwave the peanut butter and the maple syrup until it's pretty hot and bubbly. Don't let it burn, but you're trying to melt the peanut butter as much as you can (I find that natural peanut butter sometimes never fully melts).
- Stir in the oatmeal.
- Line a 9x13 dish with parchment paper and spread the oatmeal mixture out in the bottom of the dish. Sprinkle the chocolate chips on top and use your hand to press them down. Even if you're not using chocolate chips, press everything down with your hands a bit.
- Chill, covered, for at least 2 hours before you slice. Store in the fridge or freezer.
