Microwave Wacky Mug Cake

Dear Turkey,

Light and fluffy and
Perfect for when you don't want
Tons of leftovers


Microwave Wacky Mug Cake
(makes 4 individual cakes, adapted from here)

Ingredients:
- 3/4 c flour
- 1/2 c sugar
- 1.5 T cocoa
- 1/2 t baking soda
- 1/4 t salt
- 3/4 t vanilla 
- 1.5 t distilled or apple cider vinegar
- 3 T canola or another neutral oil
- 1/2 c cold water

Instructions:
- Combine the dry ingredients and make 3 wells in the mixture. Pour the vanilla, vinegar, and oil each into a separate well and pour the cold water over the top. Stir to combine. 
- Generously oil 4 medium-to-large microwave-safe mugs. Divide the mixture between the mugs.
- Microwave the mugs one at a time (I didn't cover them), for about 1 minute and 30 seconds, depending on your microwave. A knife should come out clean; this is a light and fluffy cake, not a molten microwave cake like this one. Cook for another 10 seconds if you're not sure.
- Let stand for about 30 seconds and then you should be able to run a knife around the cake and pop it out of the mug if you want. Serve right away with fruit, whipped cream, whatever you want.
