Decadent Double Chocolate Olive Oil Cookies
(makes 24)
Ingredients:
- 1/2 c olive oil (use the good stuff)
- 1/3 c milk (I used soy unsweetened)
- 1/2 c brown sugar
- 1/4 c white sugar
- 2 t vanilla
- 2 T chia seeds
- 1.5 c white whole wheat flour
- 1/3 c cocoa
- 1/2 t baking soda
- 1/2 t baking powder
- 1/2 t salt, plus more for sprinkling
- 1 c chocolate chips
Instructions:
- Stir together everything except chocolate chips. It will be crumbly. Add chocolate chips.
- Knead with your hands just until the dough comes together in a ball.
- Cover 2 baking stones with parchment paper and use your hands to make 12 balls of dough for each stone. They won't really spread out while baking. Sprinkle them with sea salt. Most of it will roll off onto the floor.
- Bake at 350 F for 13-15 minutes, or until they start to crack and feel a bit firm. Cool completely on the stones. These keep well at room temperature, in the fridge, or in the freezer.
