Healthy Pumpkin Spice Cookies with Applesauce
(makes 24, adapted from here)
Ingredients:
- 1 can pumpkin
- 1/2 c applesauce (I used unsweetened)
- 1 scant c sugar
- 1 t vanilla
- 1 t baking soda
- 1 t baking powder
- 1 t salt
- 2 t pumpkin pie spice
- 2 c white whole wheat flour (or whatever you have)
- 1 c chocolate chips
Instructions:
- Combine everything and mix until a dough forms.
- Cover 2 baking stones with parchment and drop 12 cookies on each stone.
- Bake at 350 F for 12-18 minutes, until they feel slightly firm to the touch and the edges are just starting to brown. Let stand on the stones for a few minutes before removing.
- These freeze well.
