My "no sugar" days
Decadent Vegan No Sugar Added Chocolate Banana (optional) Chia Pudding
(makes 2 cups, adapted from here)
Ingredients:
- 1 c milk (I used soy unsweetened)
- 1/3 c whole chia seeds
- 1/4 c cocoa
- 1/2 c mashed banana (I used one 1/2 c container of Gerber mashed banana), optional -- if you don't like chocolate and banana, just add an additional 1/2 c milk
- 6-8 medium pitted dates
- 1 t cinnamon
- 1 t vanilla
- pinch salt
- berries and orange zest, for garnish
Instructions:
- Blend everything but the garnishes in the blender for about 2 minutes. Add more milk if needed.
- Chill, covered, for at least 2 hours.
- Garnish and serve. These keep in the fridge for a few days.
