Irish soda bread
In the form of a scone is

Vegan No Added Sugar Irish Soda Bread Scones
(makes 8, adapted from here)
Ingredients:
- 1/2 c milk of your choice (I used soy unsweetened) + 1/2 T cider vinegar
- 2 c flour (I used oat)
- 1.5 T baking powder
- 3/4 t baking soda
- 1/2 t salt
- 2 T solid coconut oil
- 2 T unsweetened apple sauce
- 1-2 c currants, soaked in hot water for 5 minutes and drained
- 2 t orange zest, fresh or dried
Instructions:
- With your hands or a stand mixer, mix/knead everything until only pea-sized balls of coconut oil remain. I ended up with a slightly wetter dough than usual for scones, which is fine.
- Cover a baking stone with parchment and make 8 flattened balls of dough and place them on the parchment (or make a disk and slice it either before or after baking).
- Bake at 375 F for 20-25 minutes, until golden brown.
- Serve with butter, jam, or just plain. These freeze well.
