Amazing, Easy, and (Almost) Healthy Vegan Cookie Cake
(adapted from here)
Ingredients:
- 2 c whole wheat or white whole wheat flour
- 1 t baking powder
- 1 t baking soda
- 1 t salt
- 1/2 c sugar
- 1/2 c brown sugar
- 1/2 c olive oil (use the good, green stuff, like for salad)
- 1/4 c milk of your choice (I used almond)
- 1 bag chocolate chunks
- whipped cream, vegan if you want, for topping (I used homemade, which I made with not too much sugar, and some vanilla), optional
Instructions:
- Use some extra olive oil to generously oil a round cast-iron skillet or other oven-safe pan.
- In a bowl, stir together the dry ingredients. Then dump in everything else and knead with your hands for just a minute until a ball forms.
- Bake at 350 F for 20-30 minutes, or until the top is starting to get firm. Store at room temp and microwave your slice before eating if you want. Top with whipped cream.
