Poached Figs
(serves 6 as a small dessert, adapted from here)
Ingredients:
- 1-2 c water, enough to cover the figs in your pot
- 1/4 c honey
- 2 T brown sugar
- 1 cinnamon stick and/or 1 vanilla bean (optional)
- 12 figs, halved and stems removed
- yogurt or whipped cream for serving (vegan is fine), optional
Instructions:
- Boil the water, sugar, honey, and spices until the sugar dissolves, stirring occasionally.
- Add the figs and simmer until tender but not falling apart, about 5-10 minutes. Remove from the liquid with a slotted spoon.
- Boil the remaining liquid until it starts to thicken and become syrupy, or just until it's time to eat.
- You can store the figs and liquid in the fridge before serving, or you can serve them warm or room temperature. Place the figs in a bowl, top with syrup, and then whipped cream or topping of your choice. Store the figs and syrup separately in the fridge.
