Superfood Chia Breakfast Bowls

Superfood Chia Breakfast Bowls
(serves 6, adapted from here)

Ingredients:
- 1 can coconut milk (not the light stuff)
- 6 T chia seeds
- 5 T shredded coconut (I prefer unsweetened)
- 4 T maple syrup
- 1 t vanilla
- fruit, for garnish (I usually use frozen berries that I defrost in the microwave)

Instructions:
- Mix the first 5 ingredients and chill for a few hours, or overnight.
- To serve, put a scoop in your bowl and top with fruit. You can keep the chia mixture in the fridge for a few days and keep eating it (for breakfast, if you're me).
