I was watching The
Great British Baking Show and
I invented these
Chocolate Chili Grahams
(adapted from here, makes about 18)
Ingredients:
- 1.5 c whole wheat flour
- 2 T cocoa
- 1/2 t baking soda
- 1/2 t salt
- 1/4 c maple syrup
- 1/4 c coconut oil, melted
- 1/4 c milk (I used soy unsweetened)
- 1 t chili powder (or something hotter, or smokier, if you want), or to taste
- 1 t cinnamon
Instructions:
- Knead everything with your hands until the dough comes together in a ball.
- Roll out the dough on a piece of parchment paper that will fit on your baking sheet. This should roll out pretty easily without any extra flour; if it doesn't, chill it for just a minute or two.
- Place the dough, parchment and all, on a baking sheet and bake at 350 F for 10-20 minutes, depending on how thick it is and how crispy you like it. I'm not normally a crunchy cookie person, but I like these pretty crunchy.
- Cool completely, slice, and dust with powdered sugar and cinnamon. These keep well covered at room temperature.
