Magical and Healthy(ish) 6-Ingredient Vegan Chocolate Chip Cookies
(makes 12, adapted from here)
Ingredients:
- 1 1/4 c white whole wheat flour
- 1/3 c coconut oil, room temp or soft
- scant 1/3 c sugar
- 4 T milk of your choice (I used unsweetened cashew)
- 1/2 t baking powder
- 1/4 c chocolate chips
Instructions:
- Combine everything and mix until a ball forms (I used my hands).
- Cover a baking stone with parchment and arrange 12 flattened balls of dough on the parchment (they won't spread out or flatten while they bake).
- Bake at 365 F for 10-20 minutes, or until the tops are starting to feel firm and the edges are getting a little bit golden brown. Let them stand and firm up a bit more before removing from the stone.
