Vegan Rice Krispy Treats
(makes 15)
Ingredients:
- 1 10-oz bag vegan marshmallows (I used Dandies)
- 4 T coconut oil
- 5 c cereal (I used Love Grown Chocolate Comet Crispies)
Instructions;
- Melt the marshmallows and oil in the microwave, stirring often. Watch for expanding marshmallows and make sure they're really melted.
- Stir in cereal.
- Press the mixture into a shallow rectangular pan or Tupperware. I lined mine with parchment first. Cool at least to room temperature before slicing; a few minutes in the fridge wouldn't hurt either.
- Store in a sealed container in the fridge or in a cool place.
