Sweet and Filling No Added Sugar Vegan Banana Chocolate Chip Muffins
(makes 12, adapted from here)
Ingredients:
- 4 very ripe bananas, mashed (I used 5 1/2 c containers of Gerber mashed banana)
- 1 T ground flax seed + 3 T warm water
- 1/2 c coconut oil, melted or very soft
- 1 t vanilla extract
- 1 t almond extract
- 1 c milk (I used soy unsweetenend)
- 2 c white whole wheat flour
- 1/2 c chocolate chips (I used Lilly's stevia-sweetened)
- 1 t baking soda
- 1 t cinnamon
- 1 t salt
Instructions:
- Stir together everything just until combined. If your coconut oil was solid, try to reduce lumps to smaller than the size of a pea.
- Divide batter between 12 muffin cups -- or make a couple of extra muffins if you're worried that your cups are too full and coconut oil will spill into your oven. Just saying.
- Bake at 325 F for 25-30 mins or until a knife comes out clean. Cool completely and remove.
- These freeze well.
