Vegan No Added Sugar Chocolate Biscuits

I bought Belvita
Biscuits and I was like, I
Can make these myself


Vegan No Added Sugar Chocolate Biscuits
(makes 16)

Ingredients:
- 2 c pecans
- 1 c pitted dried dates
- 1/2 c cocoa
- pinch salt
- 1/2 t baking soda
-1 t vanilla
- 1 T flax or chia seed, whole or ground (I used whole chia)
- 1.5 c oatmeal
- 1/2 c chocolate chips or chunks of your choice (I used Lilly's stevia-sweetened)
- 1 c room temperature water, or as needed

Instructions:
- In the food processor, process everything except the chocolate chips, adjusting water as needed. When the dough is mostly smooth, pulse in the chocolate chips to combine.
- Cover a baking stone with parchment and make 16 flattened disks of dough on it (they won't really spread out while baking). 
- Bake at 350 F for 15-25 minutes, depending on size and how crunchy you like them. These freeze well.
