Pumpkin Spice Scones
(makes 15)
Ingredients:
- 1 can pumpkin
- 1/2 c canola oil
- 1/2 c milk (I used soy unsweetened)
- 1 t vanilla
- 4 c flour (I used white whole wheat)
- 1/2 c mini chocolate chips
- 1/2 c chopped nuts (I used pecans)
- 2 t pumpkin pie spice
- 3 t baking powder
- 1 t salt
Instructions:
- Knead everything together with your hands until a ball forms.
- Line a cookie sheet or two with parchment paper (they don't spread out too much in the oven so I was able to fit them on one). Make 15 balls and arrange them on the cookie sheet. Drizzle them with honey and sprinkle them with some cinnamon.
- Bake at 400 F for 25 minutes or until they are golden brown. These keep well at room temperature.
