Healthy, Sophisticated, Vegan Ginger Cookies

Dear Turkey,

Bake them short and they're

Healthy, Sophisticated, Vegan Ginger Cookies
(makes 15, adapted from here)

Ingredients:
- 1 T flax + 3 T warm water
- 1/4 c brown sugar + more for rolling (optional)
- 1/2 t baking soda
- 1/4 t salt
- 2 T solid coconut oil
- 2 c almond flour or meal (since you're going to use the food processor, you can also just grind up almonds beforehand)
- 1 t vanilla
- 1 T molasses
- 2 t ground ginger
- 1 t cinnamon

- Combine all ingredients in the food processor and process until a ball forms. The dough may be sticky; as long as you can scoop it, you're fine.
- Cover a baking sheet with parchment and make 15 balls of dough, rolling each one in brown sugar before putting it on the sheet if you want (I found that the sugar didn't stick that well -- you can just sprinkle them all when you're done scooping). Flatten the cookies a bit with your finger -- they won't spread out while baking. 
- Bake at 350 F for 11-21 minutes. 11 minutes will give you a very chewy, nutty cookie. 21 will give you a crunchy, slightly caramelized cookie. Cool on the baking sheet for at least 10 minutes.
