The following is a special message about how easy it is to make pizza:
1. You don't even have to make the dough.
2. You can use any toppings you want.
3. You don't have to make a big giant pizza and have to fit the rest in the fridge.
4. It only takes, like, 20 minutes.
When you're making a pizza for yourself, and/or hungry people, you can put anything on it that you want. This is my dream pizza. If you don't want your pizza to be an umami sensation, that's your prerogative.
My Dream Pizza
(serves 2)
Ingredients:
- 2 big handfuls pizza dough (homemade or store-bought)
- 1/2 c goat cheese, crumbled
- 1/4 c sundried tomatoes packed in oil
- 1 big handful arugula
- 1 handful basil
- 2 shallots, sliced thin
Instructions:
- Cover a baking stone or cookie sheet with parchment paper.
- Spread out the pizza dough with your hands as thin as you can and lay it on the parchment. Don't worry if it doesn't look beautiful; you can say it's artisanal.
- Bake at 350 degrees for 10 minutes.
- Remove from the oven and top with arugula, basil, cheese, tomatoes (let a little of the oil drizzle on, too), and shallots in that order (now who's bossy?).
- Bake at 425 degrees for 10 minutes, then broil (watch carefully!) for another minute or two until the tops of the tomatoes and shallots blacken just a bit.
