Not Your Grandma's Kasha and Bowties
Ingredients:
- 1 c kasha (buckwheat groats: you can find this in the Jew section or the bulk section of the grocery store)
- 1 egg (optional -- if you're vegan, just use some canola oil instead)
- 1 yellow onion, chopped
- 1/4 c olive oil
- 1 T smoked paprika
- 2 t onion powder
- 2 t garlic powder
- salt and pepper to taste
- 4 c veggie broth or 4 c water + 4 heaping t veggie bouillon (I used Vogue Cuisine)
- 8 oz bowtie shaped pasta
Instructions:
- Soak the kasha in the beaten egg (or about 1/4 c canola oil) for about 5 mins.
- On med/high heat, cook the onion, olive oil and spices for 3-5 mins, stirring.
- Add the kasha/egg and cook for another 5 mins, stirring (reduce the heat if need be).
- Meanwhile, warm up the broth a bit or, if using water, just use warm/hot water here.
- Add the water/bouillon or broth and the bowties and cook on med/low, stirring, until bowties are al dente.
- Remove from heat and add more spices to taste, especially smoked paprika.
- Oil a baking dish, pour everything in, sprinkle with more spices (especially paprika) and bake at 375 F until heated through.
- Serve with Chipotle Tabasco sauce.
