Easy Maple Candied Pecans

Dear Turkey,

No, you don't have to
Bake them first, and they are still
Really addictive


Easy Maple Candied Pecans
(adapted from here, this recipe only yields 1-2 c so feel free to increase batch size)

Ingredients:
- 2 T sugar
- 2 T maple syrup
- 1/2 t cinnamon (feel free to add other fun spices, like cayenne, coriander, smoked paprika, whatever)
- 1/2 t salt (in addition, you could sprinkle with some sea salt or sugar when the pecans are drying at the end)
- 2 t coconut oil
- 1-2 c raw pecans (or any nuts), halved or chopped (if you like more candy:pecan ratio, use 1 cup)

Instructions:
- Combine everything but the pecans in a nonstick (trust me) pan and heat, stirring, until everything is mixed together and simmering.
- Add the pecans and cook on medium heat for 3-5 minutes, stirring frequently. You want to cook these until your kitchen smells like a carmel corn store in the mall and you're afraid they are about to burn. Stir them, but also let them rest for at least a few seconds at at time. You'll want to see the liquid start to become stringy like taffy or at least darken and harden up a bit. 
- Spread the pecans out on a parchment-covered cookie sheet, sprinkle with sea salt, sugar, and more spices if you like, and let cool at least 20 minutes. Store at room temperature in an airtight container.
