Healthy and Decadent Vegan Thumbprint Cookies

Dear Turkey,

These are kind of like

Can eat for dessert


Healthy and Decadent Vegan Thumbprint Cookies
(makes about 12, adapted from here)

Ingredients:
- 1 c nuts (I used pecans, hazelnuts, and walnuts -- I definitely recommend pecans)
- 1 c oatmeal, not quick-cooking
- 1 c whole wheat flour
- 1/2 c canola oil
- 1/2 c maple syrup
- 1/4 t salt
- 1-2 c jam/Nutella/peanut butter/whatever's delicious (I used peach jam)

Instructions:
- Combine everything except the last ingredient in the food processor and process until a ball forms (you don't have to make it totally smooth; as long as you can make little balls out of the dough, you're good).
- Cover a baking sheet with parchment paper and drop 12 balls of dough onto it. Flatten them out a bit and put a generous dollop of your last ingredient in the middle.
- Bake at 350 F for 15-20 mins. They will start to smell toasty and delicious when they're getting done. I was worried that the bottoms would start to burn, but they didn't.
