Fall Curry That Your Mom Will Like

Dear Turkey,

Easy and tasty
Makes your clothes smell like autumn
And not too spicy


Fall Curry That Your Mom Will Like
(serves 4)

Ingredients:
- 2 onions, chopped
- 1 t minced garlic (jarred is fine)
- 2 T honey
- 1/2 c raisins (I used golden)
- 1 T bouillon (I used Better than Bouillon No-Chicken)
- 2 T curry powder (I used yellow)
- 2 T lemon juice (bottled is fine)
- 2 T olive oil
- 1 can chick peas, rinsed and drained
- 4 c raw spinach (or slightly less frozen spinach)
- 2 c frozen butternut squash, cubed (no need to thaw)
- 4 tomatoes, coarsely chopped 
- 2 batches naan, or some tortillas, or store-bought naan, or rice
- Yogurt and sriracha, for garnish  

Instructions:
- Combine the first 8 ingredients in a big pan and cook on medium to high heat for about 5 minutes, stirring occasionally, until the onions start to brown.
- Add the chick peas and cook another 2 minutes, stirring as needed.
- Add the tomatoes and squash and simmer for 10-15 minutes, until the tomatoes give up their liquid, and everything is nice and saucy, stirring as needed. 
- Remove from heat and stir in the spinach. Add more seasonings to taste.
- Serve with naan and top with plain yogurt and sriracha (for those of us who do like our curry spicy).
