End of Season Garden-Fresh Pasta

Dear Turkey,

If you've had a frost
The stuff in your garden might
Be on the decline


End of Season Garden-Fresh Pasta
(serves 3)

Ingredients:
- 3-4 c pasta (I used the "fresh" fettuccine from the refrigerated section of the grocery store)
- 1 c peas (I used frozen)
- 1 c cooked butternut squash, cubed (I used frozen)
- 4 tomatoes, quartered
- 2 T olive oil
- 2 t minced garlic (I used jarred)
- 1/3 c red wine vinegar
- 1 t onion powder (or some onions from your garden)
- 1 t bouillon (I used Better-than-Bouillon No-Chicken)
- 1 t dried basil (or fresh, if you still have some)
- parm (optional) and red pepper flakes, for topping

Instructions:
- Cook the pasta and throw in the peas and squash at the end so that everything is just done (this will just take a sec if you're using frozen veggies).
- Meanwhile, in a separate pan, heat the oil, tomatoes, garlic, basil, onion powder, and bouillon. When the garlic starts to brown, add the vinegar and simmer for 5-10 minutes, or until the tomatoes start to fall apart and the liquid starts to thicken.
- Toss the tomato sauce with the pasta/veggies and top with cheese and red pepper flakes.
