Amazingly Good Rosemary Olive Oil Cake

Dear Turkey,

If I told you that
It has chocolate chips, would it
Sound more amazing?


Amazingly Good Rosemary Olive Oil Cake
(adapted from here)

Ingredients:
- 1 c white flour
- 1 c whole wheat flour
- 1 t baking soda
- 1 t baking powder
- 1/4 t salt
- 1/2 c extra virgin olive oil
- scant 3/4 c maple syrup
- 3/4 c milk (I recommend whole or soy unsweetened)
- 1/4 c lemon juice (jarred is fine)
- 1 heaping T fresh rosemary, cut up as small as you have patience for (or substitute another hearty herb like lavender, fennel, or lemon peel -- or even cinnamon)
- 2/3 c chocolate chips (I recommend bittersweet chocolate chunks)

Instructions:
- Generously oil a pie dish (olive oil is fine for this).
- Mix the dry ingredients, including the rosemary. Make a well in them and add the wet ingredients and chocolate chips; use a spatula to mix just until combined.
- Bake at 350 F for 30-45 minutes, or until a knife comes out clean (this took me 40 minutes). Cool completely. This cake will probably be better the next day.
