Quick and Delicious Creamy Squash Pasta
(serves 2)
Ingredients:
- 2-3 c pasta
- 1-2 c butternut squash, cubed (I used frozen and I didn't defrost it)
- 1/2 stick butter
- 2/3 c white wine
- dash salt and pepper
- 2 t dried basil
- parm, for the top
Instructions:
- Cook the pasta and throw in the squash to defrost right before you drain it.
- While pasta is draining, heat the butter, wine, salt, pepper, and basil. Your intention is not to brown the butter, but you also want to cook it hot enough so that the alcohol begins to reduce quickly. This is not as difficult as it sounds. Just cook everything down at a good little boil for 2-5 minutes.
- Return the pasta and squash to the pot and toss to coat. Let stand 2 minutes.
- Top with parm.
