Cauliflower Pizza

Dear Turkey,

You have to try them


Cauliflower Pizza
(serves 2, adapted from here)

Ingredients:
- 2 lbs frozen cauliflower, thawed either in the fridge overnight or in the microwave for a few minutes
- 1 egg
- 1/2 c soft cheese (I used whole-milk ricotta)
- 2 t dried oregano
- 2 t dried basil
- 1/2 t salt
- toppings of your choice: I used a little olive oil, parm, sliced garlic and shallots, tomatoes, basil, balsamic reduction, red pepper flakes, and a little black pepper

Instructions:
- In the food processor, grind up the cauliflower until it's in really small pieces -- you're going for a flour-like texture. Place the ball of ground up cauliflower in a thin dish towel and squeeze the water out of it like it's your job. It will be surprisingly dough-like. Place it in a bowl and mix well with the other non-topping ingredients.
- Line a pizza stone or a cookie sheet with parchment and spread the cauliflower mixture evenly into a pizza shape with a spatula. Think thin-crust here, but not too thin or it will crack. This may take a little trial and error to get the right size and consistency, but it's a surprisingly forgiving "dough."
- Bake the crust at 400 F for 30 minutes. Then flip it over (I covered a new cookie sheet with parchment, placed it directly on top of the old cookie sheet, and turned everything over -- this was probably a little too conservative and could have been accomplished with a spatula) and bake it for 10 more minutes.
- Top with toppings and bake 10 more minutes, finishing under the broiler if you want.
