Springy and Delicious Strawberry Scones

Dear Turkey,

I saw these at a
Coffee shop and decided
Not to spend money


Springy and Delicious Strawberry Scones
(makes 10, adapted from here)

Ingredients:
- 3 c white flour
- 1 c whole wheat flour
- 3 T sugar
- 3 T solid coconut oil or cold butter (but I highly recommend coconut oil)
- 1/2 t salt
- 1.5 c milk (I used soy unsweetened)
- 1.5 c strawberries or other fruit (I used half dried sweetened strawberries and half raw sliced ones)

Instructions:
- With a pastry cutter or a fork, chop the first 6 ingredients together until the coconut oil is mostly incorporated and you don't have many lumps bigger than a pea (but don't go crazy).
- With your hands, fold/knead the fruit in. Try not to work the batter more than you have to.
- Cover a baking sheet/stone with parchment paper and form a 1-inch-thick disk of dough on top. You'll have to finesse some of the flour/crumbs/random lumps in. It will be fine. Don't make it too neat because you'll risk overworking the dough and losing that flakiness.
- Bake at 450 F for 20 mins (if you're me and you like it just the tiniest bit doughy in the middle), or 30 mins if you like it nice and brown and crispy. Slice like a pie into 10 slices before it's totally cool.
