Chocolate Chunk Cookies with Sea Salt

Chocolate Chunk Cookies with Sea Salt
(makes 18-24, adapted from smitten kitchen)

Ingredients:
- 1 stick butter, room temp
- 2 T sugar
- 2 T turbinado sugar (if you don't have any just substitute more brown or white sugar)
- 3/4 c + 2 T brown sugar, packed
- 1 egg
- 1 t vanilla
- 3/4 t baking soda
- heaping 1/4 t salt
- 1 3/4 c flour
- 1/2 lb good semisweet or bittersweet chocolate, cut up into 1/2 inch chunks (I used Scharffen Berger Semisweet -- it was like a 9.7 oz package and I used it all) 
- sea salt or other larger-grained salt, for sprinkling 

Instructions:
- With an electric mixer, cream butter and sugars for 4-5 minutes. Beat in vanilla and egg. Mix in everything else at low speed, and stir in chocolate at the end. The dough will probably be a little crumbly. 
- Cover 2 baking sheets with parchment and scoop 9-12 cookies onto each sheet. Sprinkle with sea salt. 
- Bake at 360 F (not a typo!) for 11-12 minutes. The outsides should be golden but the insides will be soft. Rest at least 10 minutes on the sheets before you remove them.
