Black Sesame Carrot Cake

Dear Turkey,

I've done this before
But this one is a little
Bit more exciting


Black Sesame Carrot Cake
(makes 1 loaf, adapted from here)

Ingredients:
- 1.5 c flour (I used white, but you can use whole wheat)
- 1.5 t baking powder
- 1 t salt
- 1 t cinnamon
- 1 t ground ginger
- 1 scant t nutmeg
- 3/4 c sugar
- 1/3 c brown sugar 
- 1/2 c canola oil
- 1/3 c unsweetened applesauce
- 1/4 c milk of your choice (I used walnut)
- 1/2 t vanilla
- 3 medium carrots, coarsely grated
- 2-3 T black sesame seeds or poppy seeds

Instructions:
- Generously oil a loaf pan.
- In a big bowl, combine the wet ingredients and sugars. Stir in dry ingredients (save the sesame seeds!).
- Pour the batter into the loaf pan and generously sprinkle sesame seeds on top.
- Bake at 350 F for 60-70 minutes, or until a knife comes out clean. Cool completely and remove from pan. This is best on day 2.
