Copycat Pumpkin Spice Kettle Corn

But you can't stop eating it.
Here's your solution


Copycat Pumpkin Spice Kettle Corn
(adapted from here)

Ingredients:
- 1/3 c canola or vegetable oil
- 1/3 c sugar
- about 2/3 c popcorn kernels 
- a few T pumpkin pie spice
- a few T good quality large-grain salt
- about 3/4 c white chocolate wafers (try to get some good ones without a bunch of fake ingredients -- this is possible) + a little vegetable or canola oil, melted in the microwave until smooth

Instructions:
- In the bottom of a heavy pot, combine the oil, sugar, and kernels. Heat until everything is combined and then pop them with the lid on on medium heat. Add the spices and salt and toss everything around until mixed. Season to taste. 
- Cover a cookie sheet or two with parchment and spread the popcorn on it. Drizzle generously with the white chocolate and put in the fridge/freezer/a cool place briefly until the chocolate has hardened.
