Magical Lemony and Garlicky Beans and Artichokes

Dear Turkey,

Dish that is fast, healthy, and
Just a bit magic



Magical Lemony and Garlicky Beans and Artichokes
(serves 2, adapted from smitten kitchen)

Ingredients:
- 1 can artichoke hearts, rinsed and drained
- 1 can beans of your choice (I used cannellini), rinsed and drained
- 1 t minced garlic (I used jarred)
- 1 T olive oil
- salt and pepper
- 3 T lemon juice
- 1 t red pepper flakes
- a few T fresh herbs of your choice (I used basil and Italian parsley)
- parm (optional)
- bread or pasta (optional), (I used Trader Joe's Cauliflower Gnocchi)

Instructions:
- Heat the oil, red pepper flakes, garlic, salt, and pepper in a pan (I used nonstick) until the oil is hot and the garlic is starting to brown (this will just take a minute).
- Add the artichokes and beans, and then the lemon juice. Cook, stirring occasionally, on medium/high heat until the liquid is mostly cooked off and things are starting to brown a bit on one side (about 5-7 minutes). (I added the frozen gnocchi right after the lemon juice.)
- Serve over bread or pasta if you want, topped with herbs and cheese.
