Cocoa-Dusted Vegan No Added Sugar Easy Baked Donuts

Dear Turkey,

I promise you won't
Realize there's no sugar
Except for the fruit


Cocoa-Dusted Vegan No Added Sugar Easy Baked Donuts
(makes 12 small (but bigger than mini), adapted from here)

Ingredients:
- 2.5 c flour (I used white)
- 2 c Medjool dates or raisins
- 1 c milk of your choice (I used coconut -- not from a can)
- 2 t baking powder
- 2 t baking soda
- 2 t cider vinegar or lemon juice
- 2 t vanilla
- 2 T cornstarch 
- For dusting: cocoa powder, cinnamon, powdered sugar (optional)

Instructions:
- In the blender, blend dates/raisins and milk until as smooth as your blender will get it. 
- Blend in remaining ingredients, ending with the flour (you can stir this in by hand if it's too much for your blender, or add a little more milk if that will make it work).
- Oil 2 donut pans (mine are between regular- and mini-sized, and, although they're silpat, I still oiled them and so should you). 
- Divide the dough into the pans and press it down gently. 
- Bake at 350 F 10 minutes, or until the tops are starting to get brown. Cool and remove. Dust with toppings. These freeze well.
