Super Easy and Saucy Rice Bowls

Dear Turkey,

This takes ten minutes
And you'll feel like you're at a
Really good lunch place


Super Easy and Saucy Rice Bowls
(serves 2)

Ingredients:
- 1/2 c cubed cooked butternut squash (I used frozen)
- 1/2 c peas (I used frozen)
- 1 T peanut butter
- 1 T tamari
- 1 T brown sugar
- 1 T sesame seeds
- 1 T lime juice (I used jarred)
- 1 t siracha
- 2 c cooked rice (I used boil-in-bag brown rice)
- 1/2 c tofu, cubed (I used Ithaca Soy Tofu Kan -- it's amazing)
- 2 T pickled ginger
- 2 T kimchi (I used Mother In Law's Kimchi, vegan)

Instructions:
- Microwave the veggies (if frozen) and stir in the next 6 ingredients. Stir that into the rice and let stand 1-2 minutes.
- Top with tofu, ginger, and kimchi.
