East Meets West Tostada

Dear Turkey,

It's lunchtime.  If you're me, you want something Mexican, or at least with beans in it. But maybe you want something Asian, too, for a change. Something light with a tangy and sweet sauce.

This tostada doesn't even have rice on it, thereby allowing you to have ice cream cake for dessert. The shredded veggies are a fun contrast to the beans, and they make everything cook quickly. I wasn't sure if the smoky chipotle and cumin flavors would blend with the rice vinegar, or it would just taste like a mishmash, but it was awesome.

Rice Cooker Cake

Dear Turkey,

I'm always intrigued by those lists online of all the stuff that you can make in a rice cooker. My rice cooker doesn't have any of those fancy buttons or programs or times, but it still knows when whatever I'm cooking is done. Even a cake.

This is basically a wacky cake. It's vegan, and it's delicious. I like how the rice cooker cooked it really slowly and evenly, and I will definitely rock this in the summer when it's too hot to turn on the oven.

Sweet and Spicy Baked Tofu

Dear Turkey,

One of my friends doesn't like umami foods. I know. She didn't even know what umami was. The fact that we are still friends is a testament to her awesomeness in all other areas.

The other day at lunch with our co-workers, this friend said, "Tofu, I think that we are at the point in our relationship where you can invite me over for dinner and cook for me." It was right at one of those moments when all other conversation had ceased, and everybody laughed. Well, Umami-hating Friend, I will have you over for dinner, but not for this awesome dish.

Creamy Miso Slaw

Dear Turkey,

Remember that cabbage from the other day? Well, half of it was still in my fridge. And that was exciting because I found this recipe (which I modified) for a slaw that used up many things that also happened to be in my fridge. I knew that the combination of miso, Dijon mustard, and honey would be awesome and healthy. I was correct, and the Dijon rounded out the miso in just the right way.
