Awesome Chocolate Pie

Dear Turkey,

Don't tell my mom that
I may like this recipe
More than I like hers


Awesome Chocolate Pie

For the crust:
(this recipe will make 3-5 crusts, depending on how thin you roll out)

Ingredients:
- 4 c flour
- 1 T sugar
- 2 t salt
- 1 3/4 c butter-flavored shortening
- 1 egg
- 1 T distilled vinegar
- 1/2 c water

Instructions:
- With a pastry cutter or your hands, mix everything together until a ball forms.
- Cover your surface and rolling pin with flour and roll out crusts. You'll get 3-5 depending on how cold the dough is and how thin you roll. You can store this dough in a ziplock bag in the fridge for at least a week and in the freezer for months.
- For this pie, I lined one pie dish with one crust and baked it at 350 F for about 20 mins. Let it cool completely. 


For the filling:

Ingredients:
- 12 oz chocolate chips (I used semisweet)
- 1/4 c milk (I used whole)
- 1/4 c sugar
- pinch salt
- 4 eggs, separated
- 1 t vanilla
- whipped cream (homemade, please) for topping

Directions:
- In a double boiler (or the microwave -- don't tell my mom), melt the chocolate chips. Stir in the milk, sugar, vanilla and salt. If you're worried about raw eggs, this would be the time to get the mixture up to at least 160 F. Stir or beat in the egg yolks until everything is smooth.
- With a mixer, beat the egg whites until stiff peaks form. Fold into the chocolate mixture (again, this would be the time to get the chocolate mixture [before adding the egg whites] hot enough to kill salmonella if that worries you).
- Pour this into a completely cooled pie crust (don't remove it from your pie dish unless you have major skills) and chill for at least half an hour. Top with whipped cream. Store in the fridge.
