Post-Run Pizza Awesomeness

Dear Turkey,

You ran ten miles:
Put this in the oven and
Go take a shower


Post-Run Pizza Awesomeness

Ingredients:
- 1 batch pizza dough (combine all ingredients and let rise for 30 minutes in a warm place)
- 1 T olive oil
- 1 t salt and pepper
- 2 T minced garlic (I used jarred)
- 2 c fresh basil leaves
- 2 c cherry tomatoes, halved
- 1 c shredded mozzarella (optional)
- 3 big shallots, sliced into thin rings
- 2 T balsamic vinegar or balsamic reduction

Instructions:
- After the dough is risen, make it into a pizza shape and bake it on a parchment-covered pizza stone for 5-10 minutes at 425 F, or just until it starts to get a tiny bit golden-brown on the top. Let it cool for a few minutes.
- Spread/arrange the toppings on the pizza in the following order: oil, garlic, salt and pepper, basil, tomatoes, cheese (I usually put in on half), shallots, balsamic. Go running. 
- Bake at 425 F for 10-25 minutes until the cheese is totally melted (this will depend on several factors: how thick your crust is, how many toppings you use, etc.). Then broil for just a minute or two (don't walk away!) until the shallots start to get crispy. They might look burned; that's okay.
