Into a cookie
The Best Pumpkin Breakfast Cookies
(makes 24, adapted from here)
Ingredients:
- 2 c white flour
- 1/2 c whole wheat flour
- 1 t baking soda
- 1 t baking powder
- 1 t cinnamon
- 1/2 t nutmeg
- 1/4 t ginger
- 1/2 t salt
- 1/2 c sugar
- 1/4 c molasses
- 1/2 c soft butter, applesauce, canola oil, or yogurt (I used full-fat plain yogurt)
- 1 t vanilla
- 1 15-oz can pumpkin
- 2/3 c chocolate chips
Instructions:
- Stir together the dry ingredients. Add the remaining ingredients and stir just until combined.
- Line two cookie sheets with parchment and spoon out 12 cookies onto each sheet. Bake at 350 F for 15 minutes.
